About This Coffee
The ripe cherries were selected by hand, then floated and separated by density. Any less dense cherries were removed. The cherries were then placed in a hopper and fermented for 12 hours. After fermentation, the cherries were dried, depulped, and kept in the fermentation tank for 24 hours. The coffee was washed and spread in African sunbed dryers for 10-15 days at which point the coffee was brought to a moisture level between 10.5% and 11.5%.
