About This Coffee

Built in 2021, the Yaye Washing Station is designed for precision and quality. Equipped with advanced washing facilities, hundreds of raised drying beds, and fermentation barrels, it processes coffee from local smallholder farmers with care. Testi Coffee is committed not only to exceptional coffee but also to the communities around its washing stations, supporting education, building schools, and providing supplies through the Odakko Project. Cleanliness is paramount: all equipment, from picking baskets to drying beds, is thoroughly washed, and cherries are processed with potable water to prevent contamination. The Odakko Project cherries come from smallholders growing the 74518 variety at 2150 –2300 masl within 10 km of Yaye. Harvested over four days in the late afternoon to control fermentation, the cherries are immediately washed, sorted by hand (95% fully ripe, 5% overripe), and laid 300 kg per raised bed under shade to dry slowly. Extended drying of 28 days reduces moisture to 12%, enhancing flavour, complexity, and preservation. Afterward, the dried cherries rest for six weeks before shipment in air tight GrainPro bags to Addis Ababa. This limited production lot prioritises perfectly ripe cherries, keeping them separate from other lots, resulting in a small, highly curated annual yield.
