About This Coffee

A true strawberry. This coffee has an overwhelming sweetness reminiscent of ripe strawberries and strawberry jam, with red wine and sweet wine-like flavours from the wine yeast and a long, lingering finish. You've probably experienced beans that have overturned your concept of coffee before, but now it's time to turn that on its head too. Jardines del Eden is a project of coffee producer and exporter Cofinet, located on the outskirts of Armenia, at the highest altitude in the Quindio, Pijao region. The farm owner, Felipe, one of the brothers who founded Cofinet, spotted the location in 2016 and decided to build the farm from scratch. This Cofinet's flagship farm grows exotic varieties such as SL28, Geisha and Java, as well as rare mutations such as Striped Bourbon and Chile Bourbon. The high altitude, volcanic soils and optimum climatic conditions result in coffees with strong varietal and terroir flavours, which can withstand the strong character added during fermentation. The lot undergoes a 72 hours of dry anaerobic fermentation, during this fermentation period strawberry and wine yeasts are added. It is then pulped with leaving mucilage and dried in raised beds at temperatures below 35°C until the ideal moisture content is achieved.
