About This Coffee
Granja Paraiso 92 is a recent solo project by Wilton, the owner of the well-known El Paraiso farm. He is deeply committed to processing methods, thoroughly analyzing sunlight exposure and nutrient levels in his own lab to customize processing recipes for each cherry. The process involves washing and sorting cherries, followed by first-stage fermentation in an anaerobic environment for 16-96 hours with controlled pressure and microorganisms. After pulp removal, a second-stage anaerobic fermentation occurs (48-720 hours) with prepared microorganisms and purified water. Post-fermentation, temperature shock washing (using hot and cold water) stabilizes aroma and flavor (while also sterilizing). Sealing the beans in bags for 8 days further matures the aroma and flavor through yeast activity. When hot, it delivers robust coffee flavors; as it cools, notes of stewed strawberry, rhubarb sweetness, and lime-like acidity emerge, transitioning into floral impressions reminiscent of lychee, rose hip, or hibiscus.
