About This Coffee
A very complex but beautifully balanced mix of popping acidity like pineapple and strawberry, mild acidity like white peach, sweetness like milk chocolate and floral notes like violets. The farm is located in San Ignacio, a rustic land that also grows 11 varieties of apples. The owner of the farm, Amando, emigrated to the USA at the age of 17 and returned to El Salvador some 30 years later and bought this land. The name Tres pozos comes from the fact that there are three wells on the land. Most of the workers are young people, who are educated and taught to lead a higher quality of life by giving them a sense of responsibility. On his farm, he reduces the number of harvests from three to two during the harvest season and allows the coffee trees to rest so that he can harvest cherries of consistent quality. Thanks to this farming method, in only its fourth year of production in 2021, they were ranked 7th in the COE, and in 2022 it was again ranked 13th.
