Bright and playful, this cup leads with a strawberry bon bon sweetness and a lively, clarity you would not expect with 60 hours of fermentation. When hot, expect medium acidity and a lingering strawberry finish. As it cools, the profile shifts gently towards a very subtle limey character, keeping things balanced without becoming too wild.
