The ET57 is an F1 Hybrid specific to Alejo's farms. Bred for hybrid vigour, the trees develop an abundance of large fruit creating plenty of mucilage for natural fermentation with large amounts of flavour. This cup exhibits a classic natural process cup, big on texture and aroma. It's got plenty of high quality acidity and as always with Alejo's coffees, great structure.
