His sons, Felipe and Carlos, continue his legacy through Cofinet importers, our main source for Colombian coffee. The Papayo coffee variety, mainly found in Huila, Colombia, has mysterious origins. Initially thought to be a Caturra mutation, it is now linked to Ethiopian varieties that somehow made their way to Colombia. Its elongated cherries resemble papaya fruit, hence the name. Jairo has borrowed a winemaking technique—carbonic maceration—using carbon dioxide during fermentation. This creates a complex, enhanced, fruit-driven profile.
