Elkin Guzman is a forward thinking coffee producer who manages Finca El Mirador, a farm with more than seventy years of family history. With a background in agricultural engineering, Elkin brings a scientific and experimental approach to coffee cultivation and processing. His work focuses on refining fermentation techniques, exploring unique varieties and continuously improving the way coffee is produced at the farm. This dedication to innovation has helped position Finca El Mirador as one of the most exciting sources of specialty coffee in Huila. In the honey process, cherries are depulped but the sticky mucilage remains on the parchment as the coffee dries on raised beds. This careful drying allows sugars to slowly integrate into the bean, building sweetness and body while preserving the coffee’s natural brightness. In the cup this lot opens with juicy red plum and raspberry, before finishing with a smooth layer of raw sugar sweetness that ties everything together.
