Bright and clean anaerobic natural Heirloom mix from Khalid Shifa. Buttery mouthfeel, bright fermenty notes, and clean, berry jam finish. Khalid Shifa is an exceptional coffee producer and processor from the Goma region in Jimma, Ethiopia. Khalid grew up on his family's coffee farm, which he now manages in his father's and grandfather's footsteps. He is particularly mindful of preserving the natural state of this unique piece of land. When planting his own farm, Khalid's grandfather went to the nearby forest to source wild coffee plants for cultivation. His farm now covers 35 hectares and reaches an altitude of 2100 masl. He also processes coffee he buys from his small-holder farmer neighbors in his facilities, like for this particular lot. Khalid has become a central figure in the surrounding coffee community, where he offers training and shares his knowledge about farming methods, cultivation, harvest, and processing.
