About This Coffee
Diofanor Ruiz grows Java at La Divisa in Buenavista, Quindío, at close to 2,000 MASL. He ferments the whole cherries anaerobically for 40 hours, then washes and dries the cherries. Soft florals and ripe fruit wrapped in a syrupy but delicate structure. A delicate selection perfect to ease into the morning or as an after dinner palate cleanser.
