About This Coffee

HiU Coffee is the collective brand of farms operated by Graciano Cruz in Panama, El Salvador, Peru, and Brazil. One of its central farms, Los Lajones, is located on the slopes of the Barú Volcano in Panama, where coffee is cultivated on 60 hectares of the 140-hectare land, including forest reserves. The farm utilizes its rich natural environment, with oak trees and bamboo coexisting as shade trees. The Bambu plot, in particular, is the highest altitude area where Geisha is planted. In the 2025 Best of Panama, it won awards in both washed and natural categories, showcasing the farm's unique terroir and advanced processing techniques to the world.
