About This Coffee

Light black tea-like drinkability with stone fruit sweetness. As it cools, tangerine notes appear. Purchased during a 2025 origin visit. Sedaka Washing Station is owned by Tracon, an exporter, located in Sidamo's Bona Zuria. Aiming for G-1/G-2 grades, 15 employees led by Kebede operate the station. Young trees ensure both quality and yield. Traditional washed processing with strict water quality standards preserves quality. Sidamo's terroir creates unique flavors, gaining global acclaim.

Description: 紅茶のような軽やかな飲み口、ストーンフルーツの甘さ。温度帯が下がるとみかんのような風味も感じられます。2025年に現地訪問にて買い付けたロットです。セダカ・ウォッシングステーションは、輸出業者でもあるトラコン社が所有するシダモエリアのボナズリアに位置する生産施設です。G-1,G-2といったグレードの高いコーヒー生産を目指して、責任者であるケベデ氏を中心に15名の従業員がステーションを稼働させています。木の樹齢も若く、高い品質のみならず生産量も強みにしています。ウォッシュトプロセスは比較的伝統的な手法を採用していますが、発酵・水洗に用いる水質基準などを設け品質を保っています。シダモのテロワールは独特の風味特性を生み、近年は世界的にも高く評価されています。
